The Food and Drug Administration (FDA) has recently issued a draft guidance, “Control of Listeria monocytogenes in Ready-To-Eat Foods.” These guidelines have several key changes compared to previous FDA guidance and are currently open to public comment until July 2017. The guidance document encourages companies to create food safety programs that seek and destroy Listeria within their operations using appropriate testing and follow-up strategies. Guidelines also include a discussion of appropriate actions for manufacturers if their testing shows positive results for Listeria spp. during the implementation of monitoring programs. This draft guidance has significant implications to the food industry, especially RTE food manufacturers.
