She will offer a look at how Danone developed the OIKOS Fusion brand to support this growing market segment.

Whitney Evans is a registered dietitian and has a PhD in nutritional epidemiology from the Tufts University Friedman School of Nutrition Science and Policy. She joined Danone U.S. in 2023, after working in academia for 10 years, where her research focused on the role of diet in obesity prevention and treatment. Since joining Danone, Whitney has supported nutrition innovations and renovations across yogurt, including the high-protein yogurt brand OIKOS, and led research in the areas of protein for performance and nutrition needs for consumers using GLP-1 medications. Whitney played a critical role in the development and launch of OIKOS Fusion, the first cultured dairy drink designed to support the nutrition needs of GLP-1 users.

David Lundahl, PhD, is the CEO and founder of InsightsNow, a behavioral research firm, and a longtime leader in sensory and consumer science. His career spans industry and academia. A published author and former chair of IFT’s Sensory and Consumer Sciences Division, Lundahl has pioneered behavioral research methods and clean label design approaches that continue to shape product and innovation strategies. He has an MS in statistics and a PhD in food science and technology from Oregon State University.
