This webcast was organized with the support of IFT's Protein Foods Division.

Effective formulation of food products requires a fine balance of science, mathematics and product knowledge (quality, raw materials/ingredients, regulations, finances). This webcast will introduce the concept of formulation, describe what it is and what it isn’t, explain its mathematical basis, and illustrate how best to leverage it in the product development process and beyond. The focus will be on meat products, but the principles apply universally.

Learning Objectives:
1. List the requirements of a protein ingredient in a specific application area, and compare that to other categories.
2. Select the right methods for early-stage assessment of protein quality for a specific application.
3. Explore new recipe and process conditions to get the most out of protein ingredients
